Ingredients
  • 1 ripe banana
  • 2 eggs
  • 1/4 cup oats (quick or regular)
  • 1 pinch salt
  • 1 pinch cinnamon (optional)
  • 1 drop peanut butter or other nut butter (optional)
Instructions
  1. Mix

    Mash the banana with a fork. Whisk in the eggs, oats, salt and cinnamon until smooth. Add the peanut butter (if desired) and swirl into the mixture.

  2. Cook

    Heat a tablespoon of oil or butter in a non-stick skillet over medium/low heat. Cook for about 2 minutes until set. Be sure the heat isn't too high so as not to burn them.

  3. Serve

    Serve with your favorite fruit or maple syrup!
